Simply put, the Add to Wares button is a means of marking items that you want to sell in Baldur’s Gate 3. When you don’t want an item anymore, right-click on it in your inventory. This will bring up a small menu. On this menu, select the Add to Wares button to mark it for sale.
After you have selected this option, you will see a small money symbol appear on the item you marked. Now, head over to a merchant and you will see the barter/trade option in the trade menu. Set this option to trade. From there, select the sell wares option at the bottom of the trade menu.
This will allow you to sell all of your wares at one time instead of needing to select them all individually. All of the gold will be added to your inventory automatically after selecting this option.
There are plenty of traders that you can sell your wares to. Marking your items for sale is a good way to remember which items you wanted to get rid of without needing to write them down or keep track of them some other way.
