How to skip the first chapter in Final Fantasy 7 Rebirth
The first chapter of the game is the Nibelheim episode which starts as soon as you are done with the intro where you play as Zack Fair. After this, it will cut to Nibelheim and play through the events that you played if you downloaded the Nibelheim demo. From here, when you finally reach Nibelheim and meet up with Tifa, you will get the option to skip forward to the village. This comes immediately after your first battle as Cloud. Remember, you need to have completed the Nibelheim demo to skip this section.
Selecting yes during this time will allow you to skip most of the first chapter. You can also skip each of the cutscenes, allowing you to skip through the chapter almost entirely. The game picks back up at the point where Nibelheim is on fire. You will still need to do the slow crawl through the area to catch the tail end of the episode.
